Tecnología de poscosecha de fruta de pepita
Abstract
En la presente publicación el lector encontrará una reseña de las principales tecnologías disponibles para preservar la calidad de peras y manzanas durante la etapa de la poscosecha. En la presente publicación el lector encontrará una reseña de las principales tecnologías disponibles para preservar la calidad de peras y manzanas durante la etapa de la poscosecha. Entre las diferentes alternativas se analizan el manejo del frío, el uso de atmósferas modificadas y controladas y la aplicación de 1-metilciclopropeno (1-MCP). Su uso correcto retrasa con eficiencia los procesos bioquímicos y fisiológicos de degradación asociados al deterioro y permite ofrecer al consumidor un producto de excelentes atributos. La información fue generada y recopilada por profesionales del Área de Poscosecha de la Estación Experimental Alto Valle del INTA durante 16 años sobre la base de ensayos científicos, experiencias con productores y técnicos de la actividad privada y referencias de la bibliografía internacional.
