dc.description.abstractDiet and pre-slaughter stress are key factors that may affect the biochemical processes during conversion of muscle into meat. The aim of the present study was to evaluate the effect of two different pre-slaughter stress managements (PSM) at a slaughterhouse in Angus steers raised and finished in two contrasting feeding systems (FS grain and pasture systems), on the peri mortem muscle metabolism, and its relation to of meat quality. Results obtained showed that a higher level of pre-slaughter stress increased (P < 0.05) glucose, lactate and proteins blood levels and decreased (P < 0.05) the redness (a* parameter) of adipose tissue. Regarding feeding strategy, pasture-fed animals displayed increased (P < 0.05) levels of haematocrit and insulin concentrations, and higher (P < 0.05) muscle pH decrease during the first 3 h post mortem. Despite final pH (pH 24 h) of M. longissimus dorsi (LD) was not significantly modified, LD hardness was significantly affected by an interaction effect of FS and PSM. Lower pre-slaughter stress level led to a decrease (P < 0.05) of LD hardness in grain-fed animals. In general terms, results showed an impact of PSM and FS on meat quality through pH-independent mechanisms. Resumen: La dieta y el estrés previo al sacrificio son factores clave que pueden afectar los procesos bioquímicos durante la conversión de músculo en carne. El objetivo del presente estudio fue evaluar el efecto de dos tipos diferentes de estrés previo al sacrificio. (PSM) en un matadero en Angus novillos criados y terminados en dos sistemas de alimentación contrastantes (FS sistemas de granos y pastos), sobre el metabolismo muscular peri mortem, y su relación con la calidad de la carne. Resultados obtenidos mostraron que un mayor nivel de estrés previo al sacrificio aumentaba (P < 0,05) los niveles sanguíneos de glucosa, lactato y proteínas y disminuyó (P < 0.05) el enrojecimiento (parámetro a*) del tejido adiposo. En cuanto a la estrategia de alimentación, los animales alimentados con pasto mostraron aumento (P < 0,05) de los niveles de hematocrito y concentraciones de insulina, y mayor (P < 0,05) disminución del pH muscular durante las primeras 3 h post mortem. A pesar de que el pH final (pH 24 h) de M. longissimus dorsi (LD) no se modificó significativamente, LD la dureza se vio significativamente afectada por un efecto de interacción de FS y PSM. Un menor nivel de estrés previo al sacrificio condujo a un disminución (P < 0,05) de la dureza LD en animales alimentados con cereales. En términos generales, los resultados mostraron un impacto de PSM y FS en calidad de la carne a través de mecanismos independientes del pH.eng
