Monitoreo de la higiene en cámaras frigoríficas
Abstract
Un método práctico, económico y eficaz que permite evaluar y validar los procedimientos de higiene en cámaras frigoríficas. Luego de la cosecha, la fruta se almacena en cámaras frigoríficas por un periodo de tiempo que puede prolongarse desde unos pocos días hasta todo un año. Un método práctico, económico y eficaz que permite evaluar y validar los procedimientos de higiene en cámaras frigoríficas. Luego de la cosecha, la fruta se almacena en cámaras frigoríficas por un periodo de tiempo que puede prolongarse desde unos pocos días hasta todo un año. Diferentes aspectos condicionan la calidad de la fruta durante su almacenamiento. Entre ellos, se destaca la presencia y la cantidad de microorganismos capaces de producir podredumbres (inóculo) dentro de las cámaras. En el caso de peras y manzanas, los principales géneros responsables de podredumbres en poscosecha son Penicillium, Botrytis y Alternaria. Las esporas de estos hongos logran sobrevivir y desarrollar en las condiciones de conservación de la fruta.
