Historia de la Vitivinicultura en América y en la Patagonia Norte
Abstract
Infinidad de documentos se han escrito, fábulas, mitos y leyendas en los que la vid figura como una planta y un cultivo que acompaña, desde la antigüedad, a diferentes culturas en el mundo. Su jugo fermentado, el vino, guardó siempre una estrecha relación con las liturgias de muchas religiones.

Infinidad de documentos se han escrito, fábulas, mitos y leyendas en los que la vid figura como una planta y un cultivo que acompaña, desde la antigüedad, a diferentes culturas en el mundo. Su jugo fermentado, el vino, guardó siempre una estrecha relación con las liturgias de muchas religiones.
El centro de origen de las vides silvestres y cultivadas se ubica en Transcaucasia1, al norte de Irán y Asia Menor; y la planta originaria habría sido muy similar a la subespecie Vitis silvestris.
El cultivo de la vid a nivel mundial está implantado casi en su totalidad con una especie, la Vitis vinífera o Vitis europea y se sitúa, en su mayor parte, entre los paralelos 20º y 51º en el hemisferio norte y los paralelos 20º y 43º en el hemisferio sur.
De la Vitis vinífera han derivado alrededor de 8.000 variedades, y el polimorfismo foliar se debe fundamentalmente a su desarrollo y adaptación en diferentes climas y suelos, en donde muchos han sufrido mutaciones.
Actualmente, con el estudio del genoma -el código genético de las variedades- se ha podido saber el origen de algunos cepajes. Los estudios realizados en los últimos años por Boursiquot y colaboradores, en la Escuela de Vitivinicultura de Montpellier, Francia, muestran que Torrontés riojano tiene como padres a Moscatel de Alejandría y criolla chica, que Cabernet Sauvignon tiene como padres a Cabernet franc y Sauvignon blanc, y que los progenitores de Pinot blanco son Pinot gris y Chardonnay. Por otro lado, Pinot meunier es una mutación espontánea del Pinot negro.
El refugio mundial de las variedades se encuentra ubicado en una colección Ampelográfica en Sete, Domaine de Vassal, INRA, Francia, cercano a la ciudad de Montpellier. Esta colección está compuesta de 5 plantas por cada variedad y se financia con recursos que aportan la O.I.V. (Organización Internacional de la Viña y el Vino) y la Unión Europea, entre las principales. Existen alrededor de 8.000 cepajes de diferentes regiones vitivinícolas del mundo, de las cuales hay unas 6.000 identificadas.
