Sistemas tamberos entrerrianos. Escenarios de adopción tecnológica y su influencia en los precios de referencia por litro de leche cruda primarios e industriales
Abstract
Entre Ríos aporta el 3% de la producción de leche nacional, siendo la leche en polvo el
principal producto elaborado. Existe una elevada heterogeneidad en el sector lácteo
primario, definida por el tamaño de las explotaciones, el volumen de producción, las
estrategias productivas y la eficiencia. Existe una alta proporción de tambos chicos,
definidos en base a entrega diaria por tambo, superficie, número de vacas totales, carga
(VT/ha VT) y

Entre Ríos aporta el 3% de la producción de leche nacional, siendo la leche en polvo el
principal producto elaborado. Existe una elevada heterogeneidad en el sector lácteo
primario, definida por el tamaño de las explotaciones, el volumen de producción, las
estrategias productivas y la eficiencia. Existe una alta proporción de tambos chicos,
definidos en base a entrega diaria por tambo, superficie, número de vacas totales, carga
(VT/ha VT) y productividad (litros/ha/año). Diversos estudios confirman la relación
directa y positiva existente entre la productividad y el beneficio económico ($/ha/año). El
objetivo principal de este trabajo fue analizar cambios en los precios de referencia por litro
de leche cruda (PRLLC) a nivel primario e industrial, producto del aumento en la
eficiencia de producción de leche y/ó de sólidos por hectárea de los tambos. Se describe el
escenario real actual de la cadena láctea, a partir de la actualización de modelos de
producción primaria e industriales y se analiza un Escenario Real “Superior”, que incluye
las características del 50% de la muestra de cada estrato con el mayor nivel de
productividad. Por último, se incorporan dos escenarios teóricos, “Holstein” con niveles de
productividad óptimos adaptados a la realidad regional y “Cruza Holstein x Jersey”,
similar al anterior pero con otro biotipo lechero. En la actualidad la banda de PRLLC
primarios se encuentra por arriba de la banda de precios industriales, reflejando
incompatibilidades entre lo que deberían recibir los productores y lo que podrían pagar las
industrias. A medida que se incrementa la productividad en litros y sólidos, se observan
variaciones en los PRLLC en ambos eslabones. Los PRLLC predominantes,
correspondientes al estrato chico primario y a la leche en polvo entera en bolsa de 25 kilos,
muestran relaciones desfavorables en los escenarios reales y únicamente en situaciones
óptimas (teóricas) se vuelven compatibles, en particular cuando se modifica el biotipo
lechero. En una provincia en donde los principales productos lácteos que se elaboran son
leche en polvo y quesos, contar con biotipos alternativos al Holstein que producen leche
con un mayor contenido de sólidos, es una opción a tener en cuenta.

productivity (l/ha VT/year). Several studies confirmed the direct positive relationship between productivity
and economic performance ($/ha/year). The main objective of this study was to analyze changes in reference
prices by crude milk liter (PRLLC) at primary and industrial levels, produced by the increase of the
efficiency of milk production and / or solids production by hectarea of dairy farms. At first instance, it is
described the current real scenario of the dairy chain, resulting from the updated models of primary and
industry production. Then it is analized a real "Superior" scenario, which included the characteristics of 50%
of the sample from each stratum with higher productivity. Finally it has been added two theorical scenarios,
"Holstein" which show optimum productivity levels appropriate to regional reality and "Holstein x Jersey”
crosses, similar to above but with a different biotype. Currently there is a wide range of PRLLC in dairy
chain, the primary price band is above the band of dairy products prices, reflecting that there are now
inconsistencies between what producers should receive and what they can industries pay. As volume milk
and solids productivity increases, there are variations in PRLLC in the two chain levels. The predominant
PRLLC, for the small primary producers and milk powder in bags of 25 kilos, show unfavorable relations on
the real scenarios and only in optimal situations (theorical) prices become compatible, especially when the
type of cattle is modified. In a state where the main dairy products that are produces are powdered milk and
cheese, have an alternative to Holstein biotypes that produce milk with higher solids content is an option to
consider.
