El uso de insumos externos para la elaboración de quesos caprinos
Abstract
La experiencia que abordaremos en el presente trabajo se llevó a cabo en el Departamento Rosario Vera Peñaloza, ubicado al sur de La Rioja. En la misma se aborda el proceso de trabajo que se lleva adelante con elaboradoras de queso de cabra, rescatando los pareceres y miradas respecto a la incorporación de insumos externos en la elaboración tradicional de quesos caprinos.

La experiencia que abordaremos en el presente trabajo se llevó a cabo en el Departamento Rosario Vera Peñaloza, ubicado al sur de La Rioja. En la misma se aborda el proceso de trabajo que se lleva adelante con elaboradoras de queso de cabra, rescatando los pareceres y miradas respecto a la incorporación de insumos externos en la elaboración tradicional de quesos caprinos.
En la región de los llanos riojanos históricamente se ha elaborado queso de cabra utilizando cuajo natural. Hace algunos años, a partir de capacitaciones que se dictaron desde distintas instituciones se comenzó a incorporar el uso de cuajo químico.
Asimismo, desde hace más de tres años se viene trabajando con el rescate y la valorización de la elaboración de quesos caprinos en el departamento. A partir de esto se pudo observar que la elaboración más tradicional, asociada a los conocimientos de tipo empíricos y sin incorporación de insumos externos, se encontraba en el área serrana. Sin embargo, estas elaboradoras a través del contacto con productores del área llana del distrito presentaron la inquietud de hacer una prueba piloto elaborando los quesos con cuajo químico. De esta experiencia surgió, desde la mirada de las elaboradoras, que el cuajo químico aumenta el rendimiento quesero y disminuye los tiempos de elaboración. Además, se elimina el agregado de agua a la leche que podría ser fuente de contaminación.
Si bien este insumo facilitaría y mejoraría la elaboración de quesos, no es de fácil acceso en la región ya que no se produce ni comercializa localmente. Se genera así una dependencia de los productores al mercado. Surgen entonces como interrogantes qué efectos tendrá en la producción quesera la incorporación de un elemento que no se encuentra en el establecimiento; cómo influye este cambio en la tradición quesera local; qué efectos tendrá en la calidad de los quesos.
