Efectos de aflatoxinas en la calidad de carnes del Pacu (Piaractus mesopotamicus)
Abstract
La producción pesquera mundial alcanzó un máximo de aproximadamente 171 millones de toneladas en 2016, de las cuales la acuicultura representó un 53% del total destinado a consumo (FAO, 2018). La producción pesquera mundial alcanzó un máximo de aproximadamente 171 millones de toneladas en 2016, de las cuales la acuicultura representó un 53% del total destinado a consumo (FAO, 2018). Estudios realizados en los últimos años, indican que a nivel mundial el 74 % de los alimentos balanceados destinados a acuicultura están contaminados, con al menos una micotoxina. En particular, la AFB1 es una micotoxina del grupo de las aflatoxinas que ha sido clasificada como Grupo 1 por la IARC (2012), sustancia carcinogénica para humanos. Además, ha sido reportada como hepatotóxica y carcinogénica (principalmente hepatocarcinoma) tanto para animales de laboratorio como para el ganado, los animales domésticos y los seres humanos. Una alimentación prolongada con bajos niveles de AFB1 puede generar, no sólo graves problemas de salud en los peces expuestos, sino que también representa un riesgo para los consumidores a través de residuos de AFB1 en la musculatura de pescado (Santos et al., 2010). Si bien no existe reglamentación especifica para AFB1 en carnes de pescado, la Comunidad Europea y muchos otros países han establecido 2 µg/kg de AFB1 como nivel máximo de tolerancia en los alimentos destinados a consumo humano, cuando no hay reglamentación especifica. Entre las especies de peces de agua dulce cultivadas en Argentina, el pacú (Piaractus mesopotamicus, Holmberg, 1887) es la más extendida en el área noreste del país y es la más importante en volumen de 57% de la producción Nacional.
